Thomas Keller is one of the reasons I fell in love with cooking.
The picture above is a picture taken with chef Katie Hagan Whelchel and the brigade of his Ad Hoc restaurant Younstville after one of the most memorable meals and evenings we have ever experienced.
Aside from his culinary talent and skills , Thomas Keller is everything I would want to be as a businessman and a builder of great teams. He and his teams elevate every occasion.
Because of his example and that of his kitchens, I am constantly trying to improve. Practice, practice and more practice pay off.
The recipes included here are among our favourites. They often include notes on technique or helpful comments.
Before you delve in, our advice is to get the best ingredients that you can find and that you can afford. Master your skills. Learn to love mise, and think ahead...everything you will need should be prepared in advance and close at hand.
